This tasty layered dish is a twist on the meaty orginal. We start with a layer of pan fried eggplant topped with a mixture of veggies simmered in a combo of our homemade tomato sauce and veggie stock. The veggies consist of red pepper, mushroom, zuchinni, carrot, parsley, onion and garlic finished with traditional seasoning of cumin, cinnamin and fresh oregano. We then add another layer of pan fried eggplant which is then topped off with our homemade bechamel sauce and baked to a nice golden brown.
